  • Step 1: Add all the ingredients to a large heavy bottomed pot, like a Dutch Oven.
  • Step 2: Add the chicken broth and stir well.
  • Step 3: Bring to a boil then turn down to a simmer and cover.
  • Step 4: Simmer for about 4 hours, stirring now and then.

Hint: Stir the beans often at the end of cooking time to add some creaminess. The more creaminess you like, cook for longer and stir more for a creamier consistency.

Expert Tip: If you don't want ALL the beans to be creamed you can take a cup or two of the beans and blend them, then add them back. This will give you a creamy texture where you still have most beans in tact.

  • 2 lb Great Northern Beans
  • 12 oz Salt Pork diced
  • 1 Large Sweet Onion diced
  • 1 Rib Celery diced
  • 4 Cloves Garlic minced
  • 80 oz Chicken Broth
  • 2 teaspoons Creole Seasoning
  • 2 Bay Leaves

Instructions

  • Add all the ingredients to a large Dutch Oven pot.

  • Stir and bring to a boil.

  • Cover and turn down the heat to a simmer.

  • Simmer for about 4 hours, stirring now and then. The southern great northern beans are ready when they're soft.

Notes

If you like your beans creamier you could cook them for longer, stirring often. Or, you could also take a cup of the beans and pass through a blender, then add back. I also use the back of my spoon and mash some beans against the side of the pot.
