After the holiday feasting is over… there’s usually some turkey left in the fridge and we think you’ll agree that today’s recipe is a tasty way to enjoy it!

How to make Turkey Mushroom Pasta Bake Recipe

  • Gradually add milk and cream while whisking.
  • Bring to boil and cook for 2 minutes, continually stirring, until thickened.
  • Add turkey, salt and pepper; heat through.

  • Add pasta to turkey mixture and stir to coat.
  • Add 3/4 C mozzarella cheese, stir.
  • Transfer to a 8×8 baking dish sprinkle with remaining mozzarella and parmesan cheese.
  • Bake, uncovered, for 20 minutes or until cheese is melted and lightly browned. Serve!

For Fit Friday this week I am challenging you to put it all together. Pick a workout, clear your mind and tap into your soul. I have found that I need to do this outside and solo, the gym is too distracting.

For me one of the best ways to tap into this is a speed workout. This week I am giving you a speed workout, just in case you have found that cathartic push a speed workout can give, but you can pick any workout you want.

As you push your body let your mind go and let yourself feel whatever may come.

Our Turkey Mushroom Pasta Bake Recipe is a fabulous way to use up some of that leftover turkey from the holidays!

Ingredients

  • 2 1/2 cups whole grain rotini, uncooked
  • 1 (8 ounce) package sliced portobello mushrooms
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 3 tablespoons flour
  • 1 1/2 cups lowfat milk
  • 1/3 cup whipping cream
  • 2 cups shredded cooked turkey, white or dark meat
  • 1 cup mozzarella, divided
  • 3/4 teaspoon sea salt
  • 1/2 teaspoon pepper
  • 2 tablespoon shredded parmesan

Instructions

  1. Cook pasta according package directions.
  2. In a large skillet sprayed with cooking spray heat oil, add garlic, mushrooms; cook until tender.
  3. Add flour; whisk until blended.
  4. Gradually add milk and cream while whisking.
  5. Bring to boil and cook for 2 minutes, continually stirring, until thickened.
  6. Add turkey, salt and pepper; heat through.
  7. Transfer to a 8x8 baking dish sprinkle with remaining mozzarella and parmesan cheese.
  8. Bake, uncovered, for 20 minutes or until cheese is melted and lightly browned.
