Plant-based fats are the best way to thicken vegan ice cream. Coconut cream, full-fat coconut milk and coconut oil will give the creamiest and thickest results. Cornstarch and tapioca starch can also be used to thicken but the end result will be a little more icy and a little less creamy.
Use higher fat content vegan milks: Oat milk, coconut milk and cream, as well as cashew milk and cream, have a higher fat content which can help create a creamier texture. Add a fat source: Adding a fat source like coconut oil or cocoa butter can also help create a creamier texture.
Re-spin ice cream if the consistency is not optimal after the initial cycle. Consider adding extra liquid for a creamier texture in certain recipes. Use official Ninja Creamy pints and avoid plastic bags for freezing.
Most vegan ice creams are made with coconut milk, almond milk or soy milk. All of those bases come from plants, and none include anything that comes from an animal. If, however, an ice cream is made with coconut milk but contains egg, it is dairy-free but not vegan, since it has egg.
We love our Creami. To use your frozen fruit, follow your instructions from the recipes that came with your Creami. If you want to make fruit ice cream thaw your fruit, place in a food processor and mix it with the vanilla ice cream recipe.
Kaminsky says that you'll get the best results from dairy-free counterparts that are higher in fat such as canned coconut milk. She typically uses almond milk as her base, but other non-dairy milks can work (steer clear of rice milk because it tends to be too watery).
A common - and better - emulsifier for ice cream is soy lecithin, which can be derived from soybeans, sunflowers and rapeseed. Soy lecithin has a neutral taste, and also allows you to make egg-less ice cream.
As well as being used to mimic the taste and texture of dairy milk, coconut oil and syrup is also commonly used, along with raw sugar cane as a natural sweetener in dairy-free ice cream. Another common replacement for dairy in vegan ice cream is cashew nuts!
Vegan ice cream recipes often rely on coconut milk, coconut oil (you can opt for refined coconut oil, which has less coconut flavor), or blended nuts to achieve a creamy texture.
Blends of vegetable oils (60% to 80% coconut oil or palm kernel oil with 20% to 40% of a liquid oil such as sunflower oil, soybean oil, peanut oil, or olive oil) are often used in vegan ice cream production to obtain the optimum amount of solid fat.
Coconut cream is a versatile ingredient that makes an excellent vegan substitute for heavy cream. While it can be purchased pre-made, it's also simple to make at home using coconut milk. Simply chill a can of full-fat coconut milk in the fridge overnight, open it and pour the liquid contents into another container.
For best results, do not process a tub if ingredients have been frozen at an angle or if the tub has been scooped out of and then refrozen unevenly. *If a tub is frozen unevenly, melt, whisk, and then re-freeze the ingredients on a level surface in the freezer for 24 hours.
The Ninja Creami Deluxe version expands upon the original Ninja Creami, which offers seven functions (ice cream, sorbet, lite ice cream, gelato, milkshake, smoothie bowl, and mix-in) while the Deluxe offers 11 (it adds slushy, Italian ice, frozen drink, Creamiccino, and frozen yogurt to the mix).
Freezing is crucial: It's paramount that the base is completely frozen into a solid block for the Ninja Creami to work effectively. Texture is key: The 24-hour freeze time results in smaller ice crystals and enhances the dessert's creaminess. For the most creamy ice cream and smoothest sorbet, this matters!
Want to make homemade ice cream with your Ninja blender? It's easy-peasy. Freeze milk and pudding mix in an ice cube tray, blend them until smooth, and voila. Create a creamy base with the frozen milk and pudding mix, then personalize it to your taste.
You'll still likely need one day to prepare for ice cream making, but the Ninja is still an improvement on its rivals. Many existing ice cream makers also then take a good 20-25 minutes to actually make ice cream, whereas the Ninja does it in a lightning-fast 3 minutes.
In a Ninja® 56-ounce food-processing bowl fitted with the standard blade attachment, place all the frozen vanilla ice cubes. Add the remaining 1/2 cup plus 2 tablespoons of whole milk and vanilla extract. Using the crush function, process for 35 to 40 seconds.
Dairy-free frozen desserts typically substitute regular milk with plant-based milk such as almond, soy, coconut, or cashew milk, although there are some amazing brands (*cough, cough, Eclipse*) that take it even further.
